Feed Your Soul: Easy Beef Stroganoff

I came across this dish years ago and have since modified it to my own taste and cooking style. If you want to enjoy a hearty and filling dish that is super quick and easy to make for weeknight dinners, then this one fits the bill!

My family and I love egg noodles. When cooked just right (not overcooked) they are just delicious. I like to give mine a bit of a butter bath and season with salt and pepper and they are just perfect!
I love the flavor of mushrooms and the beef sauce is extremely easy to make.
When I serve this to my kids I serve the noodles on the side rather then under the beef and I try to pick out the mushrooms so they don't snub their nose at it. They scarf it down each time.

Here is the recipe:
Serves 4
Ingredients
- 1 lb ground beef (lean preferred)
- 8oz package white mushrooms (or any mushroom) sliced
- 2 TBSP Olive Oil
-12 oz jar Heinz beef homemade style gravy
- 1/2 cup sour cream
- 1 bag extra wide egg noodles (ensure its the EXTRA wide)
- 3 TBSP salted butter, room temperature
- 1 TBSP grated parmesean cheese
Instructions
1. In a medium saute pan, heat 2 TBSP olive oil. Once heated (about 2 minutes), add mushrooms. Lightly salt mushrooms and cover with lid. Cook on medium high heat for about 7 minutes or until tender, stirring every so often.
2. Meanwhile, boil water in a large pot for noodles and salt the water generously.
3. While waiting for water to boil, heat a large saute pan on medium/high heat for 2 minutes then add beef and cook until brown, chopping with a spatula or wooden spoon while cooking.
4. Once beef is browned, add jar of gravy and reduce heat to low, mix beef and gravy thoroughly
5. Add mushrooms and mix in salt and pepper to taste, go light on the salt.
6. Add noodles to the large pot of boiling water and cook according to package directions, aim for al dente'. Drain noodles, once done.
7. While the noodles cook let the beef simmer for 7-10 minutes. Then add sour cream and simmer for an additional 2 minutes.
8. Put noodles back in the large pot they were cooking in and add butter, salt and pepper, to taste. Coat noodles well with butter and add a few tablespoons of Parmesan cheese and gently toss.
9. Serve with noodles on the bottom then pour beef mixture over noodles. Enjoy!
