Feed Your Soul: Mediterannean Chicken

This is a dish I came across when I was on my search for cleaner healthier eating yet still had a lot of flavor. My husband hates "healthy food" so I had to find dishes that were still very filling and had great taste while containing healthy ingredients. This one was a match!

This is a super easy dish for weeknight cooking. I particularly love it because it gives me a chance to use plenty of fresh basil from my small garden. I love the taste of the onions, olives, tomatoes and basil mixed in with the Vodka sauce. I enjoy eating the veggie portion of this dish more then even the chicken itself!


The way this dish is cooked, the chicken remains very flavorful and juicy. I personally like to cook in a cast iron skillet or any oven save skillet so I can keep this a one dish meal going from stove top to oven.

Here is the recipe:


Ingredients

- 4 to 6 thin chicken breasts

- Ground coriander

- Smoked Paprika

- Sea Salt, to taste

- Ground Pepper, to taste

- 2 Tbsp Avocado or Olive Oil

- 1 large red onion, diced

- 4 cloves garlic, minced

- 1 jar vodka sauce

- 1 diced tomatoe

- 1/3 cup sliced black olives

(drained)

- Fresh basil, roughly chopped


Instructions

Serves 3-4


Pre-heat oven to 375 degrees Fahrenheit


1. Heat oil in large oven proof skillet (such as cast iron skillet) over medium high heat

2. Sprinkle spices, salt and pepper on both sides of chicken and rub in

3. Saute chicken on both sides until brown on each side, but not cooked through

4. Set chicken aside on a plate. Add onions to skillet and cook 3 minutes, until softened

5. Add garlic and cook for 30 seconds or until fragrant

6. Stir in diced tomatoes and vodka sauce

7. Return chicken to pan and nestle in sauce

8. Put skillet in oven and bake 15 minutes

9. Remove from oven and while hot, add olives and basil gently to sauce

10. Serve by spooning out chicken and putting on plate then smother in sauce/veggie mixture
