Feed Your Soul: Pork Fried Rice

This is a delicious, easy, kid friendly recipe. My kids eat this up every time and I love that I can make delicious fried rice at home.

The key to a great stir fry is to keep a nice hot pan going the whole time. I personally like to use a cast iron pan, but any non stick pan will work just fine. If you have a wok, then this is a great way to utilize it!


A tip on the Soy Sauce, you don't want your rice drowning in soy sauce. Then it becomes a barely edible overly salty dish. When adding soy sauce, add just a little at a time, less then what you think you need, and stir well. You will be surprised that a little goes a long way. You don't want your rice turning dark brown because that likely means you've added way too much sauce. You're aiming for a nice light brown color, where the rice is just barely coated in soy sauce.


One more thing I love about this recipe is that it utilizes a lot of ingredients you likely already have on hand. This makes this recipe a hit on my list since it is affordable to make, easy to make, super tasty and kid friendly!


Here is the recipe:


Ingredients

INGREDIENTS:


- 1 1/2 cups white rice

- 2 3/4 cup chicken broth

- 1 frozen bag pea/carrot mix

- 1 tsp rice vinegar

- Soy Sauce (light sodium), to taste (usually a few dashes)

- 1/2 tsp sugar

- Salt & Pepper to taste

- Smoked Paprika to taste

- Vegetable Oil


Instructions

Serves 3-4

1. Cook rice, use chicken broth in lieu of water (or add bouillon cubes to water)

2. After rice boils and you reduce heat, dice chops opposite of the grain, into small pieces, smaller the better

3. Season pork with salt, pepper, smoked paprika and sugar, mix into meat well

4. Heat oil in large skillet 

5. Once oil is hot, add pork and cook 1 minute. Add a splash of soy sauce, enough to soak into pork, but be careful to not add too much, you don't want to completely soak pork and add rice vinegar

6. Cook pork all the way through several minutes, flipping regularly

7. In colander, put pea/carrot mix and rinse under cool water for a few minutes

8. Remove pork one cooked and drain oil from pan. Add 2 eggs and scramble

9. Add more oil when eggs are done and add rice, veggies, pork and mix it all together. Fry stirring often for about 2 minutes.
